The course is designed to cater to a broad audience seeking practical and theoretical knowledge about the plant world, including individuals interested in adopting or who already follow vegetarian diets, students and professionals in Nutrition and Gastronomy, family members of vegetarians, and enthusiasts of conscious and sustainable eating.
The adoption of vegetarianism has significantly increased, driven by a variety of motivations including ethical, health, environmental, and religious concerns. In light of this scenario, offering a course that provides technical and scientific grounding for a safe and balanced dietary transition or maintenance is justified. It is essential for practitioners and professionals in the field to understand specific nutritional needs, as well as to learn techniques to optimize nutrient absorption and manage antinutrients. From a culinary perspective, the course addresses the challenge of adapting traditional tastes and preparations through techniques for substituting animal-derived products, allowing for the creation of creative and nutritious dishes.

[content-dropdown] Participants will learn about the history and motivations behind vegetarianism and the ethical, health, environmental, and religious reasons that lead people to adopt this dietary practice. Additionally, different types of vegetarian diets (ovo-lacto-vegetarian, ovo-vegetarian, lacto-vegetarian, and strict vegetarian) will be presented, so they can understand the available options within vegetarianism. [title-dropdown] Module 2 - Health and Vegetarianism [/title-dropdown]
[content-dropdown] The positive effects of vegetarian eating on health will be presented, along with the importance of essential nutrients such as proteins, iron, vitamin B12, calcium, and omega-3 in the vegetarian diet, understanding their plant sources. Furthermore, participants will learn about essential care to ensure a balanced vegetarian diet, as well as attention to antinutrients and techniques for nutrient optimization, in order to promote a healthy and conscious lifestyle. [title-dropdown] Module 3 - Vegetarian Cooking [/title-dropdown]
[content-dropdown] A variety of substitutes in recipes and preparations will be presented, aiming to adapt recipes to have plant-based foundations. Participants will learn about meat substitutes such as tofu, seitan, and legumes, and creative ways to incorporate them into dishes. Additionally, they will be introduced to egg substitutes like ground flaxseed and fruit puree, as well as milk substitutes such as almond, soy, and coconut plant-based milks, in order to expand culinary knowledge to respect vegetarian dietary preferences and needs. [content-dropdown] Participants will discover more about the diversity of food choices within the vegetarian spectrum. From exploring raw food to the innovative concept of climatarianism, each section offers an opportunity for learning and discovery. [/content-dropdown]
